Are my parents really strict?

No doubt about it your parents are very strict. And I am more than afraid that once you do have a taste of freedom you will not know how to handle it. You should have been allowed to have had more choices. I hope that you will recognize that your parents love you and they are very fearful. College, wherever you go, should be a time where you can become more independent, you will probably be able to do that at BYU Idaho as well as anywhere. The important thing is that you will be out from under them watching your every move. More than likely you will meet up with lots of fellow Freshmen there that will be having their own first taste of independence. You should emerge from college a totally different person than when you started, keep your values, but be your own woman. Your parents will be proud of you and so will you. BTW husbands don't just drop from the sky. lol. If they did your parents would be even more afraid. Concentrate on your studies, then have some fun.
